Everett amazingly is no longer allergic to eggs. We still do a lot without eggs and my hubby and i are having more issues with gluten so we will be updating with a new blog

Peppermint muddy buddies

I found a fun recipe for christmas that is definitely egg free!! Peppermint Muddy Buddies!!!
The recipe is on my recipe page as well as the banana brownies. We tried it and it turned out really well. It's rich so beware, but its really good!! Enjoy for Christmas or if you are daring share with friends!! Merry Christmas!!

Cookies and Brownies Fun without eggs

This past Thanksgiving as I reported I would be cooking up a few things sans eggs. I made cookies from a gluten free premix, brownies from scratch and pancakes from scratch. they turned out well but I would definitely do things different to make them even better. I'll post the recipes later on the recipes page.

Thanksgivings are hard for the kid with Allergys

So this weekend for Thanksgiving we are going to a cabin with the extended family. They support us in going eggless, but they still plan on having eggs. I wish they would try to go without eggs for one weekend so that we can keep our kid safe, but we are going to just have to bring up food of our own. I plan on making some mini pancakes for him and then we have a potluck night and I am making eggless chocolate chip brownies for that. so that is our fun right now. we are preparing for this little Thanksgiving weekend fun.

Late post

Sorry guys and gals. Its been busy since August. DJ, my oldest, and I went back to school. we have tried some new recipes. so Give me a week or two and I'll post those recipes. We tried Zucchini muffins with Nutella topping and we had a meatloaf sans eggs.

We have been trying some new things. We tried a zucchini muffin that turned out good. We tried a breakfast skillet and meat loaf. all of which was wonderful, and hey I am loosing weight!!! E is gaining weight and he seems to be complete different and doing better without eggs!!! Yes there are days that I miss my eggs but its ok. If E is doing better then I can do without the eggs.

Finding Out More on Egg Allergies.

I went to WIC today to talk to someone more about E's egg allergy. They gave us a brochure on egg allergies and told us about a book for all allergies. The book is Living with Food Allergies by Betty Wedman- St. Louis PhD RD. and the brochure is Egg Allergy. There is a list of food to avoid and Substitutions for what the egg is for like leavener or binder. It also talks about where to find hidden sources of eggs.
So we are still learning but it is getting easier.
Also I made wheat bread today using flax seed meal and water. It looks like it turned out pretty good so I am excited. If it tastes good I will post the recipe later.

Signs of an egg allergy

I thought I might share how we discovered our son has a food allergy. It all started one year ago, he had hives up his face when we had eaten cinnamon rolls. At the time we thought it was cinnamon because our older son had rashes when he ate cinnamon. He then followed up by occasionally having 1 or 2 hives a day on his legs. But we thought maybe bug bites because it wasn't full fledge rashes. Then they stopped for a while and we could give him stuff with cinnamon and have no reaction. Just recently though I had learned to make homemade spaghetti sauce so one night we had the spaghetti and salad (with ranch) he had spilled it all over his chest while eating and had hives where the food was touching. that's when I called the doctor and got an appointment. we had talked about food allergies and he decided to go ahead and have him tested. the week before his first appointment with an ear, nose and throat doctor he had a bad ear infection that tore his ear drum. when it was healed we went to the ent and they stated there was fluid behind his ear drum. so we went through another round of antibiotics but not the normal kind. It then took us two months to have a follow up and check to see if there was still fluid. Of course there was still fluid at this time we decided it would be best to place tubes and take his adenoids and do the allergy testing while he was under for the adenoids. 10 days later we the follow up and that is when they gave me the egg allergy diagnosis. The doctor explained that hives are not the only sign. having fluid on the ears, runny/stuffy noses, sore throats, and upset stomachs, diaper rashes, etc are all signs of food allergies did not know, but now that I look back he has had all the signs. He had the worst diaper rashes. he has always pulled on his ears like they have bothered him. It really helped to learn about it and now we are doing our best to avoid anything that has egg so that we don't have to worry about a severe reaction or anymore tubes. I wanted to share because I wanted to help other parents. I know that there are people out there that are concerned their child may have a food allergy and this should help to give you more information to watch for. It is a scarey road but you are not alone.
