How to cook spaghetti squash for spaghetti and meatballs. preheat oven to 450 degrees. place spaghetti s quash on a cookie sheet. poke hole with fork in top. place in oven once preheated and cook for 45 minutes. once cooked pull it out and cut in half. scoop out seeds like cantaloup and then scoop out noodles. serve /with spaghetti and meatballs, Alfredo, brown sugar, pesto or even just Parmesan cheese. It has the texture like spaghetti and tastes wonderful. Enjoy!

New recipe for Zucchini Muffins

1 1/4 c Flour
3/4 c quick oats
1 1/2 tsp. Baking Powder
1/2 tsp. salt
3/4 tsp ground Cinnamon
1/2 tsp Ginger
1/2 tsp Nutmeg
3 T. Water, 3 T. Oil, 2 tsp Baking Powder mixed together
1 medium Zucchini finely shredded
3/4 c applesauce

Preheat oven 400 degrees Line muffin cups with paper liners, In large bowl stir together flour sugar oats baking powder salt and spices. Set aside. In small bowl combine water oil and baking powder mixture: zucchini and applesauce. Pour wet ingredients into dry ingredients. Stir until just moist put in paper lined cups bake for 20 to 25 min or until toothpick inserted in center comes out clean. top with nutella or topping that is written next

 Topping
1/4 c sugar
1 1/2 tsp ground cinnamon
2 T. milk free margarine melted

combine cinnamon and sugar dip tops of warm muffin in melted margarine and then in to cinnamon sugar mixture

Breakfast skillet

1/2 ib sausage/bacon
6 cups hash browns/frozen cubed potatoes
1 green bell pepper and red bell pepper
1/2 cup onion
Cheese if desired
salt and pepper to taste

cook in large skillet sausage until browned remove from heat and remove grease cook potatoes drain add peppers and onions cook til tender add sausage and cheese

Banana Brownies

 2 c all purpose flour ( you can use whatever you use if you are looking for gluten free I'm sure)
 3/4 c white granulated sugar
 1 t. baking powder
 1 t. salt
1 c mashed ripe bananas
1/4 c unsweetened soy or almond milk
1/4 c canola oil...( I used applesauce instead, but I would add 1/2 c applesauce.)
1 t vanilla extract
1 c dairy free chocolate chips.

1. preheat oven to 350 degrees. Lightly oil 9"x13" baking dish and set aside. ( I would recommend smaller because it was thin.)
2. In large bowl combine dry ingredients and mix well. In separate bowl combine mashed bananas, milk, oil, vanilla. add moist ingredients to dry ingredients and mix well. fold in chocolate chips.
3. pour batter in pan and bake 25-35 min or until toothpick inserted in center emerges clean. allow to cool before serving.

Makes 5 cups

5 c Rice Chex Mix
10 ounces melting white chocolate (I  used half a bag of Mint Kisses and half a bag white chocolate chips.)
1 c crushed candy canes
1 c powdered sugar

pour 5 c chex into large bowl. Melt white chocolate according to package directions. Pour melted chocolate over cereal, stirring and folding until cereal is completely covered, fold in crushed candy canes.
in large bag add powdered sugar. Pour the chocolate covered cereal into the bag, close and shake until all the cereal is covered with powdered sugar.
enjoy.
store at room temperature up to 2 weeks, if it lasts that long :)
